SUMMARY

The Cook is responsible for the preparations of food in accordance with current applicable federal, state and local standard guidelines and regulations, and as directed by the Food Services Director to assure that quality food service is provided to the residents at all times.


ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.


  • Serves food and manages portion control during meals, at an adequate pace to ensure everyone is served in 30 minute’s time.
  • Prepares all garnishes, main dishes, vegetables or fruits, starches, breads, and desserts.
  • Prepares meals in accordance with the current community menus and corresponding recipes (nutritious, balanced colorful and tasty to the residents).
  • Understands the diet types offered by the community; assists in maintaining current physician diet orders and resident photos.
  • Has knowledge of American and Continental style cooking and has knowledge of soups, sauces and baking.
  • Maintains sanitation, order, cleanliness and safety in the food preparation/storage areas according to Company, County and State Guidelines. (Dry Storage, Chemical, Walk-Ins, etc.)
  • Completes side work and cleaning schedule as assigned by Food Services Director.
  • Follows recipes while using skilled judgment in cooking. Can adapt food for 50 recipes to meal quantities of 125, or according to census demands.
  • Responsible for interpreting instructions in all kitchen communications.
  • Responsible for proper storage of all food items. Leftovers must be put in proper containers (no food left in cans), labeled, dated and rotated.
  • Notes any comments from residents regarding meals, in Dietary Daily Logbook.
  • Supports and follows through on instructions given by the Food Services Director, and Dietary Consultant.
  • Manages utility and wait team members when Food Services Director is not present.
  • Responsible for Temperature Logs and Sanitation Logs. (Walk-In Cooler/ Freezer, Reach-In Coolers/Freezer, 3 Compartment Sink, Dish Machine, ETC.)
  • Assists with menu planning
  • Maintains substitution log
  • Makes rounds through dining room after all meals have been served to ensure resident satisfaction.

Protects privacy and confidentiality of information pertaining to the resident, team member, residence, company information and records.

Maintains a safe and secure working environment and practices safe working habits.

Complies with the attendance/break policy.

Complies with the cell phone and social media policies.

Maintains neat appearance, good personal hygiene and appropriate attire per company dress code.

Participates in training, in services and attends meetings when required.

Assists with special projects as assigned and performs other related duties.


QUALIFICATIONS

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. Prior to presence in the community, applicant must have completed a Post Hire Health Questionnaire upon offer of employment. A TB test result must be received with 7 days of employment. Previous TB test results cannot be older than 6 months; chest x-ray results 2 years. A Criminal Record Clearance is required prior to team member’s starting date.


EDUCATION and/or EXPERIENCE

High school diploma or general education degree (GED); or one to three months related experience and/or training; or equivalent combination of education and experience. Knowledge of the basic concepts of nutrition and diet management for both regular and modified diets. Ability to prepare large quantities of food while preserving its flavor, nutritional components and attractiveness.


LANGUAGE SKILLS

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or team members of organization.


MATHEMATICAL SKILLS

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.


REASONING ABILITY

Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. Ability to supervise kitchen personnel when necessary. Ability to read and follow recipes and to modify same to increase or decrease yield.


CERTIFICATES, LICENSES, REGISTRATIONS

Must maintain a current Safe Serve Certification.


PHYSICAL DEMANDS

Position requires the ability to stand, reach, bend/stoop/crouch, push/pull/lift/carry up to 50lbs, twisting/ turning and repetitive motion


PHYSICAL ABILITIES

Must have good vision, hearing and speech
