Position Title: Sous Chef

Overview: In the absence of the Chef, the Sous Chef will assume responsibility of the culinary operation, providing leadership and direction to all kitchen personnel. The Sous Chef ensures that all recipes, food preparations and presentations meet the community specifications and commitment to quality as well as maintaining a safe, orderly, and sanitized kitchen.

Essential Job Functions:

• Responsible for the direction of the department in the absence of the Chef.
• Assists in maintaining and enforcing policies and procedures of all meals of all levels of care.
• Coordinates daily meal preparation adhering to quality standards and established time frames in the absence of the manager or as directed.
• Assists in ensuring that all mealtime deadlines are met in all levels of care.
• Assists Chef in maintaining adequate and balanced food inventory.
• Assists in developing appropriate goals and action plans to meet resident expectations.
• Practice all safety and loss prevention procedures.
• Works hands–on with the kitchen staff in all aspects of service – including cooking techniques, food production and cook to order service - to reach and maintain a productive and efficient kitchen consistently.
• Maintains understanding and knowledge of proper use and maintenance of all kitchen equipment including POS system and printers.
• Informs the Chef of all activities and operational problems, making suggestions for improvement and corrections as needed.
• Performs daily shift change walk thru of the kitchen staff.
• Assists the Chef in planning, costing and executing all menus, including Seasonal Cycle menus, Special Theme Day menus and Holiday Buffets.
• Assists in ongoing in-service education programs for employees. Assists in the training of kitchen associates in accordance with Community standards.

You Have:

• Associates degree in culinary arts program preferred.
• Previous experience as a Cook in a senior living community preferred.
• Successful completion of recognized food safety course – Serve Safe.
